Tonight we are having smothered oxtails over rice, steamed asparagus, homemade dinner rolls, and blueberry-apple-pineapple cake with vanilla frosting.

In my quest for freedom from asthma & a multitude of food allergies, I'm on a very strict elimination diet & trying my best to find new foods. Seems I'm allergic to just about everything I've normally eaten, including spices & plants, so it's trial by error & somewhat exhausting to add in 1 new ingredient per wk, then see what happens before retreating back to basics or proceeding to another food.

Tried something new today... besan flour aka gram flour aka one kind of chickpea flour (apparently, there are 3 types).

I mixed 1/4-C with water & pink Himalayan salt as a batter for chicken drumsticks & fried them in coconut oil with a bit of olive oil. Not boring at all. The besan nicely browns & it wasn't boring tasting... it has a subtle, very slight sweetness. When done, I sprinkled chicken with 2-Tlbs of nutritional yeast flakes... another new thing that's not boring at all... it has a nice, subtle cheddar cheese flavor.

So far, so good. If I'm not itchy head to toe tomorrow or have a red, rashy face, I might have 2 things I can actually eat. Can't wait 'til I get to the point where I can have multiple foods on a dinner plate.
