large chopped onion
thumb size chopped ginger and 4 garlic cloves
salt/black pepper
turmeric,cinnamon,chili powder
can of diced tomatoes
2 cups vegetable broth
2 sweet diced potatoes
2 zucchinis
1 cup long grain basmati rice
1 can of chickpeas(or 19 oz cooked chickpeas)
Leftover mushroom frittata, colcannon, and cheese-crusted toasted cauliflower. It’s a bit of a cabbagey meal.
