I started a Dutch oven for komla this morning. Norwegian potato dumplings in ham broth.

Then I discovered the ham hocks I had in the freezer were fresh pork hocks. Oh well, thought I'll just add a ham base. When it came time to do so I discovered I had very little left and it was hardened and had an off smell to it. Sent DH for more and I don't know what he did but he didn't come home with ham base.

So right now the broth is on the deck where it will stay overnight and then I can remove the fat. Tomorrow is ever a mystery. Perhaps we will have kumla in (sort of) ham broth or we will have kumla in pork broth. Either way we'll have it with a little sour cream and butter and have very full tummies. Dad would say, "That'll stick to your ribs."

I love the story of this old country food. In the fjord lands it was tradition for people to make a large pot of this for Saturdays. No matter how humble the household they were then prepared to offer a filling meal for anyone who took a notion to drop in for a weekend visit.

If there were any leftovers the next day they would slice it for breakfast and brown it in bacon grease or butter. It is one of those dishes that keeps well and also tastes better the second day.
