Debsi, steak tacos sound wonderful!

I had tacos too, but plain ol' beef ones, although I DID once again make my own hard shells by frying some corn tortillas ... and they turned out great. Dinner was delicious, albeit a bit time-consuming, which is not good when I still had lots of grading to do.

Hope everyone had a good weekend. My elderly kitty Quinn died at home 1 week ago today (it was VERY quick and I was actually home AND in the same room as him when it happened, and I will always be grateful for that), and I am (of course) still very sad about that, but he lived a long life with me and his kitty siblings, and remembering that helps. I think I had him for 13 or 14 years -- got him as an adult kitty who had VERY CLEARLY been loved by his previous humans, who somehow lost him ... but work kept me pretty much distracted today. That's good, but on the other hand, sometimes I DO just need time to mourn ... you know? My "heart kitty" Hansel died (I can't use that stupid word "passed," UGH) back in October and I am still not over losing him, but then again, he was my "kitty boyfriend" according to my SO , so that makes sense, right?

Sorry for my rambling ... weird day. I think I am just exhausted, frankly. One more week to go before SPRING BREAK so I just have to hang in there ...

My daughter in law’s uncle has a cattle ranch in Kansas and we got a really nice arm roast from her freezer when we watched the grandkids. I slow cooked it today with potatoes and carrots and I steamed some green beans also.
