It is bitter cold here, but the early morning sunshine on the snow reflecting, the snow blanket covering the fields, trees, mother nature sure knows how to paint a beautiful winter scenery.

Tonight butter chicken with basmati rice, green chili raita and lemon water to drink. For dessert apple and banana casserole, one of my favorite childhood dishes.

My apple and banana casserole....
100 gram soft butter well mixed
3 to 4 small buns ripped in small pieces and soaked in milk and after they are soft squeeze just a bit the extra milk out
4 to 5 beaten eggs
6 to 7 peeled and diced Cortland or Macintosh apples OR 6 apples and 1 sliced banana
125 gram sugar
pinch of cinnamon
juice and rind of 1 lime or lemon ( more aromatic with a lime)

Hand mix everything well and put in a buttered casserole dish and bake for roughly an hour in 350 F oven.

Yum, Alm!

Tonight it's homemade chicken noodle soup from Chef Daughter.

This afternoon I'm making fattigman - Norwegian poor man's cookies. I did some yesterday for daughter's birthday and I'm using the rest of the dough today to share with a couple of my friends of Norwegian heritage. You can't get these anywhere around here anymore so they are a real treat.

Don't use this recipe. It's unneccesarily complicated.

I have leftover chicken, I will eat it, but don't know yet with what. Probably a sweet potato that needs to be used.
