Wow, Karen!

DH turned 75 and I took out all the Thanksgiving food I threw in the freezer when we flew the coop. Now we've got wonderful leftovers. This is one meal that's always better the next day. Well, except for the turkey, maybe. But I'm not that crazy about turkey anyway.

Turkey breast, stuffing, gravy and mashed potatoes, escalloped corn with Swiss cheese, roasted mixed root veggies, sour cherry salad with candied pecans, maple bacon cole slaw, brown and serve rolls and pumpkin pie.

The kids and the new sweetheart came to celebrate. I thought we had enough for an army but it turns out new friend is as much a trencherman as Bachelor Son. By the time the leftovers were all portioned out to take home there was just enough for a meal for us and some sandwiches. I do love to feed people who eat. I mean eat!

I'm going to have my annual white meat, cranberry sauce, mayo, onion, lettuce sandwich on toast. My dad used to add a layer of stuffing to that. That's really gilding the lily.

Sounds great, but your dad was right. Stuffing is critical.

Baked a salmon filet with lots of herbs and a lemon, brown sugar and butter glaze. Instant mashed potatoes (I have no real ones and am trying to avoid the grocery store) and a really nice salad with romaine, fresh asparagus, radishes, persian cucumbers and persimmons (I bought a whole box this weekend at HMART). I am laying off all sweets and wine for the month of January so dessert will be a cup of herbal tea.

Tonight pan fried chicken Schnitzel/Zigeunerschnitzel simmered in Hungarian paprika sauce and served with bread dumplings/Semmelknödel.To drink Löwenbräu.For dessert 1/2 a pink grapefruit.
