Last night it was baked spicy chicken breast, twice-baked sweet potato, and salad.

Last night was Zuppa Toscano and Sourdough bread. Tonight is either Leftovers, or Sloppy Joes.

More chili. What can I say? It's chili weather here.

A friend stopped by with some zucchini chocolate chip bread from her freezer. Never had it before. It looks tasty.

Today I'm making some hummus for extra snacks.

Found an old package of dried prunes in the pantry and they were dried rock solid. Soaked them for a while and they have reconstituted. My grandma used to make prune whip, a pretty humble dessert and system motivator. She'd crack the seeds and put the little kernels in the whipped cream too. Waste not; want not.

I asked DH if he thought he'd eat prune whip. Yes, he would. So I'm fixing up a couple of dishes of this old horror from our childhoods.

Googled this: "Poison Control does not recommend purposefully ingesting fruit seeds or pits. However, if you do eat a couple accidentally, you're probably fine."

Probably fine. LOL

SO asked for Paprikageschnetzeltes. So be it:>) Chicken breast finely sliced in cream with paprika/cayenne/onion/garlic, basmati, rabbit food. Cold weather food.
Leftover mashed potatoes will reappear as apricot rolls with cream cheese frosting. Slightly sweet and freeze well.

Tonight we are having a Puerto Rican rice stew with shrimp, pigeon peas and ham; Texas toast; and a chocolate orange loaf cake.

It's 5:30pm & I haven't eaten all day... only had time for 3 espressos.

From the moment my foot hit the floor, I did 4 unexpected phone interviews, have another tomorrow morning & set up 3 face-to-face interviews for next week... all with a ruptured rib muscle, which feels like Braveheart being torn to shreds in the movie.

Dinner's gotta be 2 sausages & 4 eggs (even though I'm allergic to the latter), cuz it's all I've got & I can barely wait for them to cook. Gotta get to the market tomorrow. I've been in too much pain to care & getting a job is priority, so I can continue to eat.
