Higher Profit margin.
That is what it comes down to.
Then if you are a person that lets the Marketing/advisers sway you... they milk you dry in your weekly shopping trip!
1. I don't care about marketing. I have never cared much for the taste of cow's milk, unless it's in the form of cheese! Therefore my preference is for something that has similar properties to cow's milk, but not the taste.
2. Could just be me, but I find that an opened carton of almond milk last me two or three times longer than a regular opened carton of cows milk, thus actually saving me money in the long run.

Or, if you find you're not using something up before it goes bad, you could just buy in smaller quantities.

A half gallon of milk is like fifty cents more than a pint, negligible cost difference. Or I can spend a dollar more and save having to buy 'milk' for a month. Shrug.

That's another good point, it does last longer once opened. We don't have kids so we throw away milk a lot )I still buy regular for my fiance). I can't even remember the last time I had to throw away opened almond milk.
Walnut milk. Almond milk (sweetened, unsweetened, flavored for coffee, etc). Oat milk. Soy milk. Flax milk. Etc.
I get that some people are lactose intolerant; and there have been milks without lactose for years. I get that some people are allergic - that's been true fir years as well.
So what's causing this rather recent proliferation of this stuff? Vegans? Plant based diet fans?
Money and marketing
How the hell do you milk an almond, oat or soy? Must have very tiny fingers

I think it's just another trick to get people away from treating milk like a generic/commodity and command up to $5.99 per half gallon.
