For the record, there are many bananas that do not taste very good until they appear to be overripe. We eat a lot of Thai bananas each month. In my opinion, they taste better when they are almost black. I have had to keep my DW away from throwing them out or freezing them when they are that black.
Likewise. I prefer my bananas "overipe," just before the point where they turn into banana brandy!
My opinion on plantains is the opposite. Peel them yellow, cut into about 1 inch rounds, fry on both sides, smash a little to flatten them to about a 1/2 inch using the bottom of a glass, soak them in water for a few minutes, pat them dry them, and fry again until crispy. They taste like potatoes, really good tater tots basically.

Those sound like my favorite apple bananas! People are afraid of them because they also taste best when the skin turns almost black.
I usually buy bananas that are partly green. The store where I bought some last week had only all green or very yellow. I chose the green ones. After a couple of days I tried one and found it had a very thick peel. When I tried a piece, it was almost tasteless and felt like sawdust. They don't have a sticker. What do I have?
No offense, but this is kind of funny. And an honest mistake if you have never seen plantains in a store before.
Follow westsideboy's advice on cooking. Fried plantains seasoned with a little bit of salt are good.
