(Yeah, I know I'm gonna get blasted for my skepticism of the validity and need for the GF craziness. Have at it.)

It's best not to consume gluten.
As someone who was skeptical of gluten free diets, I have done gluten free for over a year and it fixed many problems that aren't related to being celiac disease at all. Because gluten is a foreign object that is not digestible easily it causes inflammation in the body. Slowly it gets into other parts of the body through the arteries and pierces thin blood vessels in joints and arms where the blood frequently flows through that causes further inflammation of your back, joints, muscle, etc.
When you're young your body repairs things quicker for older people with chronic problems it can be very bad for them.
Once I stopped eating gluten, a lot of my daily aches are gone and no more allergies. It's one of the best things to do to do a detox.
Now I often enjoy pizza, some bagels, and breads too but I've cut down on carbs because of gluten and in general carbs are not good for humans in general but that's a different topic.
