Ginger. Powder for some, candied ginger for others.

Browned butter in many

Cardamom in Chocolate Chunk

Fleur de Sal on everything

Good ingredients make good cookies. Butter, chocolate, vanilla, use the best you can afford and the quality is always better.

Thank you all for your input.

@Moonlady,regarding real vanilla, do stores like walmart sell them?
@SFBayBoomer, what is considered "high quality butter" or browned butter? And what stores well them?

Yes, Walmart should have what's called Pure Vanilla extract. If you look at the link (scroll down), you'll see that there are both McCormick and Great Value Pure vanilla, but there is also Bakers imitation vanilla and it's a whole lot cheaper - stick with the Pure.

As far as butter goes, look for a rating on the package that says USDA Grade A or Grade AA butter - as long as it's real butter and not margarine or another baking blend, you should be fine.

(Though I'd accept any coarse salt including Mortons Kosher, if that's all I have.)
