I got distracted & accidentally bought a large can of beets, thinking they were pickled.

What can I do with them? They taste like dirt. I don't want borscht. Is it possible to pickle them, & if so, how?

There are many recipes online. Here’s a basic one....

HOW TO MAKE REFRIGERATOR PICKLED BEETS

Place cooked beet chunks into a clean jar or glass bowl.
In a saucepan, boil equal parts water, sugar and white vinegar.
Whisk to dissolve sugar.
Remove from heat, and pour over hot, cooked beets.
Let cool and refrigerate.
Let marinate in brine for a minimum 18 to 24 hours before eating.

I used to just pour white vinegar on them and let them soak a bit.

I'll eat them. I love beets. Pickled. Cooked. Either way, I love 'em. In fact don't understand why so many don't. Of course, I also love broccoli and brussels sprouts. Used to beg mama to cook the "little trees" and "tiny cabbages" for me.

I like to substitute veggies in quick breads, like carrot cake or banana bread for example. Beets, butternut squash, pumpkin, carrots, many vegetables can be shredded and used.

You could also cut up beets and make soup (borscht) or add some (not huge amount) to veggie soup, store bought or DIY.

Whenever I look in the fridge and see leftovers like mashed potatoes or peas or anything really I start thinking how to use them in combination. Beets, again shredded, could be put on a sandwich with lettuce and tomato. Or put in an omelet with onions and herbs. Use your imagination.

Beets don't have to be the star of the show to be beneficial. I just bought fresh beets so I can juice them which I then freeze in ice cube trays and then offload into freezer bags. Once a week I make each of us a juice drink with what ever juice cubes are available including carrot, pineapple, apple, kale and now beets haha! Some people make smoothies but I'm trying to lose weight so no smoothies right now.

LMAO, I laughed so hard. I love beets, and I have a friend who won't eat them because she also says they taste like dirt.

Heat them, add butter, salt and pepper, and enjoy. Or sour cream. Or, as another friend does, cut up some red onion, mix, and add some Italian dressing for an easy beet salad.

I wil just slice it and add to a salad,it is cold and does not taste that bad.
It is one food doctors recommend to Diabetic patients
