I’m not sure which organ it is but it is found on the bone on their back next to the spine bone. I have always thrown it out. Is it good or bad to eat it?
I don't know of any organ. Do you mean the pope's nose? You may want to google and see if that is what you mean?

Good grief, OP, look up a diagram of a chicken and show us what you mean! Agree, kind of sounds like the "Pope's/bishop's nose" or pygostyle. I've also heard it described as "the last part of the chicken seen going over the fence." Its not an organ, just a fatty little tidbit. Still, if your chicken was properly cooked you can probably eat everything. Feathers, beak, claws, and bones probably wouldn't taste too good!

The giblets that come in the bird? Liver, neck, heart....? I feel like I'm on a game show.

No, I am aware of all those. The ones I am referring to are always still attached.
