I don't like pork liver. Moreover, I read it is not as good for health as beef liver.

The Chinese boil pork liver with sliced potato and serve them as soup,you dip the pork liver in soysauce ,it is tasteless,and did nothing for the soup either.
Diabetic may want to look into beef tendon,it has very little calorie but takes a long time to cook and it aint cheap $6.99/lb

I've never had boudin but I do like the refrigerated braunschweiger! I suppose it is always pork and never beef?

All three products that I have mentioned are made with pork.
