I am not greedy. I'll have to teach they neighbor how to harvest bamboo shoots.... I need a Chinese maid to teach us how to prepare them properly. And yes I've had them decades ago prepared by a legitimate authentic Chinese lady who came to the states as a GI wife. That's how I came to know about bamboo shoots. I still don't know where and which bamboo to obtain but I have a link hidden away somewhere to a major nursery that has dozens of different species. I can only hope that they have a variety. There is a lot of bamboo that grows in all directions from us along the road and in private yards. When I find the link I'll share it.
