Hi all. I got a new bread machine for Christmas and haven't had the nerve to try it out yet. Does anyone have any tips for first attempt. I have made bread the old fashioned way many many years ago (hit and miss!), but don't have the stamina now.

Probably the easiest way to start is to use the recipe book that came with your machine. There should be recipes for basic types of bread and instructions on the order in which to load the ingredients into the machine. Usually, you will put the liquid (including oil) and salt into the bottom, then the flour and sugar, and then make a little well in the top of the flour to put in the bread-machine yeast. Just follow the instructions and you should be fine.

There are several companies that make mixes for bread machines. They work in pretty much any brand of machine that makes at least a 2-pound loaf. Some of the mixes are available online, and it is possible to find a few basic mixes at most large supermarkets. Using mixes is really easy; they even come with the yeast. Using just regular bread or all-purpose flour is easy, too, though.

The bread machine makes good pizza dough, too.

Just start with one of the simplest recipes to get used to how the machine works. It's really easy and fun!

There are also many books of recipes for bread machines, and recipes online. Find one you like, and go for it! It's really nothing to be intimidated by-- 5-10 minutes to put in the ingredients, push a button, and forget about it for 2-4 hours.

Got one too and figured that I can do a better and easier "no-knead bread" and have less to clean up. It looks and taste better too, compared to a bread from a bread machine.
The most important part of the bread-making process is neither kneading nor not-kneading, nor measuring with scientific accuracy, nor any technique per se. The most important thing is to leave the dough alone for long periods of time, over and over again, which is easy to do. Mine is left to rise 36-48 hrs. On the countertop. Kneading is overrated
If you're making a sourdough, the longer the yeast is allowed to ferment, the more complex are the flavors in the finished loaf. No bread machine can create this in 3-4 hrs.

Always make sure your yeast is super fresh - check on the date. Don't use any previously opened packet, except it was opened recently. The freshness of the yeast is very important.

Just in case you want to give it a try, because you should have options. If you don't like it, there always is your bread machine...

I would think that to use the bread machine the process is similar. Just few tips - all ingredients should be room temperature,
follow those steps in that order: flour, salt, sugar (if any, but it helps the yeast to rise better), little butter, tepid water, yeast.
Depending what flour you use: regular - knead twice, fast rise - knead once.
Take your time. You should allow the dough to rise.
If you like your bread with a little crust and a different shape, use your bread maker’s dough setting to do the hard part, then transfer the dough to a pan or pot with a lid, and finish it in the oven. Make a little cut on the top , across, or cross to prevent splitting.

P.S. to easy your anxiety start using it by making something simple like pizza dough, then dinner rolls, then progress. It will buid your confidence.

Use the machine to make the dough, but bake it in the oven. The machine, and the recipes that come with it, can do a lot of the work for you, but that machine bakes every loaf with the same texture. We found you could save the texture by baking it in the regular oven in its regular shape.
