If an established chef wants to learn something new, what do they do?

What avenues do they have? Like a chef works at a spanish restaurants wants to learn how to cook pasta and other italian foods. Does he just buy a cookbook, and do trial and error. Will he enroll in cooking classes? Or does he apprentice himself to another chef? Are other chefs willing to apprentice other chefs? Its just more competition.

I'm married to a chef so... When he wants to lean a new cuisine it's more trial & error. Taste, technique, knowledge all work to their advantage, they simply understand how and why things work, reading, research, collaboration with colleagues. That being said my husband has been cooking for 40+ years so someone new to the industry may apprentice, stage (generally working for a experienced chef to learn for free) to learn technique and how to work with unfamiliar ingredients. Some chefs feel it's a competition, some are great cooks and not great mentors, some are great teachers and want to grow the cooks under them to become chefs too. My husband's spark comes from travel, we try new things and he incorporates them if they work or he just enjoys them and we have a great meal.
