I do eat the end pieces because that is waste of money especially on gluten free bread.

Yes, but not right away. I usually freeze it in a ziplock bag and then at a later date make homemade croutons if I can trim all the crust off. If not, then I'll use a fork to get as much bread crumbs as I can to use in recipes like meatloaf, etc..

I don't care for the end bits, as they're drier (more crust-like material) & have less appealing texture/flavor (to me).

When I was a child someone made the mistake of telling me, "Crust gives you curly hair." I had naturally curly hair and hated it, to the point where the outer crust had to removed from the bread before I would bite into a sandwich. As an adult, I enjoy the crust on a French baggette or a loaf of Italian bread, in spite of my curly hair

Crusts go into the food processor then into the ziplock baggie I keep in the freezer of bread crumbs for meatloaf.

I do not believe in wasting food. If I don't eat the ends immediately, they are frozen for later use.
