its white american cheese...
1 1/4 (1.25) lb block White American Cheese (Land O'Lakes brand preferred), cut into 1-inch cubes
1/4 cup diced green chiles
2 pickled jalapenos, chopped
1 ounce pickled jalapeno juice
2/3 cup whole milk
1/2 cup cold water
pinch of cumin (optional)
Toss all ingredients into a large microwave-safe bowl. Microwave on high for 5 minutes, stopping to stir after every minute. The mixture might seem watery during the first few stirs, but should come together as a nice runny dip after all the cheese is melted.

Serve immediately as a dip with tortilla chips or as a sauce over your favorite Mexican dish.

*Recipe Note: White American cheese is found at most deli counters in your local grocery store.

*Reheat Instructions: Store any leftover cheese dip in the fridge. Reheat in the microwave, stirring every 30 seconds until creamy and hot.

It always amuses me to see what posts get people to join this "community". A year-and-a-half old thread about cheese dip.

Question anyone know yet???

did anyone figure out what kind of cheese it was. I saw all kinds of comments on some mexican cheese dips, but thats not what I am looking for. Im looking for what a geniune mexican resturant, ran by actual Mexicans, serve as their white cheese sauce. There isnt anything in the sauce, like peppers or what not. Its just white. It is also smothered on top of some of their dishes, like burritos. I LOVE THIS CHEESE! And miss it dearly since all of the Mexican resturaants in my county, and surrounding counties have been shut down for laundering money...

The cheese is a Mexican white american cheese- Land o Lakes is one brand. But as far as I know its only sold thru wholesale distributors. I generally can make a similar in taste dip by mixing part deli white american with some pepper jack-or you can use plain monterey jack w/ milk or 1/2 and 1/2.

Ive asked Mexican restaurants before and they have offered to sale me some-so you could check around.

There is also now a white Velveeta - Velveeta Queso Blanco. Don't know if it's offered locally. And, yes, i know Velveeta is processed and is not healthy. But sometimes it does the job!

Its called Queso Blanco. You can get Queso Blanco melting cheese at most walmart grocery stores last I checked. Velveeta even has their version

you are all wrong. I actually just ate at la fiesta last night and one of my friends works there. I asked them what type of cheese and it is white American cheese
