A few weeks ago, for a treat, I went to Sweet Tomatoes. If you don't have this chain in your area--they have a gigantic salad buffet, soup bar, pasta, potatoes and Bread--muffins, artisan breads and more as well as desserts. $12

This time they had 'Key Lime Muffins' and I cannot stop wanting more.

Here are a few recipes>>>
Coconut/Key Lime Cupcakes (I have a b'day approaching and I think this will be the Cake). 'Cupcakes' are very chic now and of course I yearn to be a Trend Setter in my circle of friends. cough. We make and eat cupcakes all the time--have never thought of purchasing a 'Designer Cupcake' or ordering them online. That would probably 'Kill' us. It is fun to decorate cupcakes--I watched my Mom/room mother for most of my elementary years do this for Holiday parties. She actually got out the pastry bags and crafted the flowers and decorations herself--none of this going to Michael's and buying cute little decorations. I believe I can decorate a cupcake. At least put a lime slice on top.

I will be making these soon and let you know if mine are comparable to those at Sweet Tomatoes. I doubt that they will be--I have never had a bad muffin from Sweet Tomatoes--they are muffin wizards.

***Always glad to have any additional muffin, lime related recipes. About 30 years ago I got a Key Lime Pie recipe that used sour cream/sugar for the topping and it is my favorite pie still. I like limes.

I know, I need to stop looking at those cupcakes. My b'day is in September and I don't need to make and eat Coconut/Lime cupcakes for the next month. LOL--and I might in the right mood. Now trying to keep the Urge under control with sugar free butterscotch pudding. Very good treat.
