Oyster sauce! My favorite!! You can use it on lots of things. Great to use in place of or addition to soy sauce, just go easy because it's salty. Great for meat marinade, any kind of stir-fries, really good on lo-mein or chow-mein. Fried rice? Sure, it'll be good for that.Just add a table spoon or so when you season the fried rice. Try coating some chicken breast or legs with oyster sauce and let it sit for a while and just grill or bake them in the oven. You can add garlic, honey, sake, red pepper flakes, etc to your taste. Great with asparagus, green beans or broccoli. My kids like cabbage fried up with oyster sauce, too.

Besides broccoli, which is probably oyster sauce's favorite pal (think Beef and Broccoli), I think oyster sauce goes very well with a stir-fry including zucchinni and mushrooms.
Having lived in Asia for 6 1/2 years, I learned to cook quite a bit there. One of my favorite dishes that uses oyster sauce is pancit (pawn'sit).
It basically can be made using one of two noodle types (canton or bihon). It includes beef, pork, chicken (or any combination of those) with cabbage and carrots. It's basically all stir fried together (I use the chicken broth to cook the noodles while I mix them in the stir fry). Top it off with oyster sauce! Probably lots of recipes for pancit on the internet.
You can also add a bit to things like stews or soups and it gives a nice, rich flavor.
