We had a couple of slices of premium-quality jalapeno cheese bread left from last week that had gotten pretty stale, so the creative fellow I'm married to cut them into cubes and used them as the basis for a breakfast casserole. He cut up an onion and sauteed it into tenderness, added a single-serving packet of Spam cut into bits and sauteed that a bit longer, then dumped the cut-up dried bread and sauteed onion and Spam mixture into a bowl with three beaten eggs. Mixed that all up well, poured the result back into the cast-iron skillet and popped it all into the oven for about 20 minutes. The result was a tasty and filling breakfast, and we didn't let that good jalapeno cheese bread go to waste!
