Migas tasted so good last week that we decided on a rerun this Sunday. Got several varieties of salsa and picante sauce await in the fridge to go with. Coffee. Cranberry juice.
Sunday (the 24th) morning at Mimi's Cafe in Lewisville, Texas, I decided upon a ham, cheese, and broccoli omelette, four slices of smoked bacon, wheat toast, and morning potatoes. Add to that a small glass of orange juice, and a cup of Mimi's coffee (two warmups and a refill). Great start to a quiet Sunday morning.
We were traveling and someone suggested we have breakfast at the Biscuit Kitchen in Fayetteville, NC. They have biscuit sandwiches with bacon, sausage, egg and cheese. You can also get breakfast platters, a BLT biscuit, and cinnamon buns.
If you are near there, do not fail to try it. YUMMY.
