We had tacos and a conversation. I told my kids I knew a group of people I could ask our ? to so help me out foodies please!
The red sauce Taco Bell puts on almost everything it seems is that the same red sauce you guys talk about when talking about red or green sauce?
In most places, you can ask for their green sauce instead of the red sauce you were talking about. The difference is about the same as between green chili and red chili.
I like them both but agree that the green is better. I even like the green tabasco much better.
Today's lunch will not be fighting a crowd. We clean up some leftovers today for lunch. Later I'll do something on the grill. I dare it to rain....
To me, taco bell sauce is HOT sauce - tabasco, cholula, tapatio, etc are all hot sauces. If it comes in a bottle and is liquidy enough to add to recipes by the drop, then it's hot sauce. These concoctions are a mixture of vinegar, red chile peppers, and spices.
When I talk about a red sauce with Mexican food, it's still red chiles making it red, but I mean a thicker, fuller sauce made with more ingredients, such as fresh onion and garlic. A little olive oil also does a wonders for its flavor. I don't put any vinegar in, maybe just a little lime juice.
If I call it TACO sauce, then I've pureed it thin enough (via added water) to put it in a ketchup-type squeeze bottle and decorate each taco/quesadilla/etc with a pretty red line of caliente on top.

Maybe I have confused you guys! I am not talking about the packets of "taco sauce" you get at Taco Bell. On their burritos and such they put this "red sauce" to me if tastes like chili con carne flavors so to me that is yuck. When I remember to order without the red sauce I can tolerate Taco Bell.
So is this red sauce the same as in most other Mexican cooking too? Debsi you make yours a little thicker but it is still a sauce right? I know when we go to our fav sit down Mexican joint we don't get this foul red sauce like Taco Bell uses.
