Since I prepared it tonight, tomorrow's lunch will be black-eyed pea salad: black eyed peas, chopped bell pepper; chopped red bell pepper; chopped red onion; shoepeg corn; chopped green olives; chopped celery; heaping spoonful of salsa; Italian salad dressing. Mix well and refrigerate. Mmm-mmm, good!
Afternoon all, smoked sausage with salad on the side and homemade potato chips. (Chips are work in progress. Basically deep fried sliced potatos and sprinkled them with parm. cheese and ranch dressing powder.) Some cooked through some didn't. Definitely will have to perfect this recipe.
I packed the last of my stir-fry over a little white rice - 3 shrimp, 2 little turkey meatballs & veggies. Vinegared cucumber salad on the side.
