Which Carolina style? There are three types - Lexington (Western NC) (tomato based), Eastern, NC (Vinegar based) and South Carolina Style (Mustard based).
Kansas City...burnt ends pushes them over the line. I also enjoy Carolina-style pulled pork a great deal.
I know it's an old thread, but on an earlier page, I read somebody's assertion that KC BBQ is strictly beef, and wanted to note that that's totally untrue.
I went down to Texas and ate at a lot of the places - Central market in Luling, Black's and Kreutz's in Lockhart, Southside market in Elgin, and Cooper's in Llano. And I thought that was the best BBQ.
But on the way home, I remembered all the whole hog BBQ in North Carolina and chopped pork in Virginia and South Carolina. And that is mighty fine eating that had to be the best BBQ and they had 10x better sides than any place in Texas.
And then I had a work assignment in Kansas City. Those lamb ribs at the Smokestack were the closest thing to divine.
What I find funny is that so many people set up their definition of BBQ so that their favorite places rank the highest. To me, its a lot like debating which supermodel is the most beautiful ... not one of them is bad.
I will say one thing. You can get a lousy meal at any BBQ joint. Show up at the end of the day or when they are serving leftovers.
