Every time I open a can of tomato sauce it goes bad within a few days. I usually put it in a plastic can or glass covered with plastic but leave for some air in. The temperature inside is fine. Do I need to cover it tight? thanks,

You are storing in the fridge aren't you? I've never seen tomato sauce go bad stored in a fridge if used within a week or so. We usually open a size of container that we will use all at once.

Just throw what you don't use into a freezer bag, express the air out and you can freeze it up to 3 months with no problems. If you are going to use it in a sauce you can just plop it frozen into the sauce and it will thaw that way.

I agree with this approach as well. Extending it to tomato paste, I almost never need a full can of the tomato paste so I line a pie plate with either foil, waxed paper or parchment paper and plop big spoonsful of the paste into the pie plate and freeze. When frozen I then pluck the frozen globs off and put them in a freezer bag and return to the freezer. That way when the recipe calls for a tablespoon of paste, I am good to go. Before I started doing this I threw out more wasted tomato paste than I ever used.

I plop chicken broth, tomato sauce etc. in ice cube trays and freeze. Pop them out and into stews, soups etc.
Before I got the Food Saver, I used to do the same thing with my fresh herbs for winter. I works great.

I'm with a few of the posters on the ziplock bag and into the freezer.

Helps to flatten it out, making it a thin pkg, and then very easy to just break off little chunks or however much you might want for later.

Do the same with stocks and such also.

That's the lazy person's way when you don't want to bother measuring!
