I have recently begun cooking with my 94 year old aunt. we have baked chocolate-zucchini bread and carrot cake. the zucchini taste like chocolate and the carrot cake tastes like a spice pineapple (it was an ingredient) cake.

what am i doing wrong. i am following recipes.

Why would ya want bread to tast like a vegetable?

Seriously, maybe it is because the amount of veg used relative to other ingredients is so minor. Maybe the idea of adding vegetables is for increased fiber and not veg tasting bread.

I don't know. Anyone else have any ideas?

Zucchini doesn't really have a strong taste so other flavors could easily become more distinctive.

Carrot cake generally tastes 'spicy' to me nothing much like carrots but pumpkin bread has more of the original flavor.

Date bread tastes like dates.

That reminds me. Raisin bread has good raisin-y flavour to it, but also, part of the flavour seems to be cinnamon.

Because you're using the vegetables for moisture and texture and their mild flavor is overpowered by the spices and other stuff you put in there. Carrot cake seems to taste carrot-y to me, but maybe that's just because of the color.
