I like broccoli & melted cheese on my baked potatoes. That adds a nutritional balance and flavors I really like. I've never tried one with fresh spinach with cheese but will one day soon I think. Other wise for just plain potatoes it is smart balance pile high and deep. Sometimes I cave in and get the real butter out to support those guys and gals that milk those cows seven days a week to clear my conscience. That's the best excuse I can find to use the real butter....
Sometimes I want mine with just salt, black pepper, and real butter (NOT spread or margarine) because I like to taste the potato, but if I want to put some toppings on I consider the following combinations or combinations of combinations:
I like to roll the potatoes before cooking in some shortening or butter and then in kosher salt. Depending on the circumstances I'll toss them in the oven or wrapped/unwrapped on some coals. I have rammed a metal skewer through them to speed up transfer of cooking heat to the interior but don't always do it. I will also sometimes wrap them in corn husks or banana leaves to protect them when cooking in or over coals.
In my book, The Best Thing to put on baked potatoes is home-made gravy from the pan drippings. Roast beef, roast pork, turkey, chicken, whatever came out of the oven about 10 minutes before the potatoes did must yield up its heavenly cooked on bits and juices to the Gravy Master, who will transform them into a pint or so of distilled essence of heaven.

sounds like you just need to mash up yours to mashed potatoes then cover it with gravy
hmmm.... i rarely eat baked potatoes...rather roast them in a pan or have them mashed....
I like the standard stuff (butter, sour cream, chives, etc.) - also with broccoli cheese soup. What about with some roasted garlic, proscuitto, and fresh rosemary?
