To ensure that kebab ingredients obey when you try to flip them - instead of staying put as the skewer spins - spear them on two skewers. The extra handle also decreases the likelihood of meat or vegetables breaking free and dropping into the coals

I just use a square grill basket, flips 'em all at once.

You can also use metal skewers that are flat rather than round to prevent this problem.

Yeah, but I make them sometimes in a large pan, stove top - then I use 2 skewers

Excellent tip! Also, be sure to soak wood skewers in water before use, to prevent burning or overheating.
