I'm making a big batch of chili right now ... talk about comfort on a cold, cloudy day.

Thinking that comfort foods are automatically unhealthy is pretty narrow-minded thinking.

Default How about posting a simple comfort food/diner food you like?

I was watching Pioneer Woman the other day, and she made her husbands grandmother's Escalloped Cabbage recipe. It sounded so good and simple, and I can't wait to make it.

1 head Cabbage, cut into wedges, and parboiled until barely tender
Drain, and place in a 9x13 pan
Mix in a saucepan:
•1 jar (15 Oz.) Original Cheez Whiz
•1 can (10 Oz) Cream Of Chicken Soup
•1 whole (or 2) Fresh Jalapenos, Seeded And Finely Diced (optional)
•1/4 cup Milk
Paprika To Taste

Stir till smooth, and pour over cabbage.
Bake 30 minutes at 350.

Yikes, Cheese Whiz? I think I would substitute real cheese.

Great topic!

My now go to comfort food.....and hubby a new convert-

Johnny Marzetti-school cafeteria food from the 60's

1 lb ground beef
diced onion
one 28 oz can of diced tomatoes + 1/2 of the can of hot water
2 c. macaroni noodles
1 Tb chili powder
1 tsp salt
1/2 tsp black pepper
1 tsp onion powder (not onion salt)
Dehydrated onions to taste

Fry up ground beef. Drain. Saute' onions.
Add all ingredients to large pan, except mac noodles
Heat till hot and bubbly
Toss in the 2 Cups of mac noodles

Stir. Lower to simmer. Cover. Set time for 20 minutes. Stir once or twice.

Ring!!...done!!!

I enjoy with some kosher dill pickle spears

If you ever find yourself in Panama City, Panama, you'll be surprised at how many restaurants have the Johnny Marzetti on their menus. It's kind of the last enduring vestige of US involvement and influence in building the canal.

I read about that when I was looking for the recipe. I had only had it during elementary school lunches, so I had to find a recipe.

LOL. On the show, she actually makes it with a white sauce, instead of the soup, but she says that any other method of "improving" the recipe, such as you suggest, never comes out as good. Anyway, I always make a recipe as written the first time, before I change it in any way.

I think there are some foods that are the best with the worst ingredients. Two examples I can think of are.... I only like Sloppy Joes with cheap soft hamburger buns, and all my efforts to improve English Muffin Pizzas with high quality ingredients are never as good.

That sounds awesome. It is pretty close to what we New Englanders called American Chop Suey, except for the chili powder.

Dodie's Meatloaf. Dodie's was a diner in Akron, Ohio, made semi famous when a certain crooked judge owned it. He was chased by Geraldo Rivera with a microphone, who was hoping for an interview.

Dodie's Meatloaf

1 1/2# ground beef
1 cup bread crumbs
1 medium onion, chopped
2 eggs
8 oz. tomato sauce
salt and pepper

Sauce

Mix until smooth
8 oz. tomato sauce
1 T. yellow mustard
2 T. vinegar
1 cup water
2 T. brown sugar

Mix meatloaf ingredients and place in preheated 350 oven for 15 minutes. Pour sauce over (it will be thin) and continue baking for 1 hour. Baste occasionally. Sauce will cook down and thicken.

My comfort food, which I'll have maybe once a year...

Hamburger Gravy over Mashed Potatoes:
1-2 lbs of of Hamburger
1/4 cup or less of flour
1 quart of milk
Salt and Pepper
Potatoes

Brown hamburger, mixing in the flour as the hamburger is cooking until lightly coated. Pour in half of the milk, sauce will thicken. Continue to add milk until you reach the desired consistency of gravy.

Pour over a giant plateful of mashed potatoes and top with butter.
