One I forgot about until recently - a Francheezie! I just can NOT duplicate that at home. To be honest, my grilled cheese sandwiches aren't as good as a diner GCS either.

oh, I agree with Missy, I don't think there is anything like the greasy, grilled sandwiches you get in cheap dines or the ones we used to get for .25 at Woolworths or Newberrys. Of course many of you do not remember either place I am sure.

jay5838,this is almost it exactly - I can't duplicate the griddle flavor/texture. And actually, Woolworth's is one of the places that I was thinking of. My grandmother used to take me there when I was a kid.

I don't know how you'd replicate the griddle flavor, but as far as texture, do you have something you could use to weight down the sandwich after it's been grilled on the first side? I don't do this myself, as "flattened out" is a texture I avoid, but maybe you two would find it to your liking. You could use the next-smallest frying pan, with maybe a can of tomatoes to weight it down further.

I wonder whether you could make grilled cheese in a pan in which you just cooked onions/garlic. I don't know how well it would work -- I've never done it -- but maybe you could add a little flavor that way.

My grandmother took me there too! We had banana splits that I think cost $.25. also Lime Rickeys.
