[CENTER][CENTER]Mocha Pudding Cake[/CENTER]
[CENTER]1 cup all purpose flour[/CENTER]
[CENTER]¾ cup granulated sugar[/CENTER]
[CENTER]¼ cup plus 2 Tbs. cocoa, divided[/CENTER]
[CENTER]1 ½ teaspoons baking powder[/CENTER]
[CENTER]¼ tsp. salt[/CENTER]
[CENTER]½ cup skim milk[/CENTER]
[CENTER]2 Tbs. vegetable oil[/CENTER]
[CENTER]1 tsp. pure vanilla extract[/CENTER]
[CENTER]1 cup firmly packed brown sugar[/CENTER]
[CENTER]1 ¾ cups boiling strongly brewed coffee[/CENTER]
[CENTER]9 Tbs. reduced-fat frozen whipped topping[/CENTER]
[CENTER]Preheat oven to 350°F. Combine flour, granulated sugar, 2 Tbs. cocoa, baking powder and salt in a 9-in. square baking pan. Add milk, oil, and vanilla; whisk until smooth. [/CENTER]
[CENTER]In a separate bowl, combine brown sugar and remaining 1/4 cup cocoa; sprinkle over batter. Pour coffee over batter (do not stir). [/CENTER]
[CENTER]Bake 40-45 minutes or until a toothpick inserted in cake portion comes out clean. [/CENTER]
[CENTER]Cool cake in pan 5 minutes. Top each serving with 1 Tbs. whipped topping.[/CENTER]
[CENTER]Yield: 9 servings[/CENTER]
[CENTER]1 serving: 270 calories, 4.1 grams fat, 2.8 grams protein, 55.2 grams carbohydrates. [/CENTER]

Looks like the snackers are holding back. My wife just gave me a snack of 7 prunes....the orange flavored ones. Really good. I just wonder if she is trying to tell me something...sort of a hidden message in there somewhere.
