I've never been a big pumpkin pie fan for some reason, but I've been making pumpkin cheesecake for a few years now and it is absolutely yummy!

I cook the pumpkin and then put it in a food processor for a while. it really breaks up those fibers.

Do you have a recipe? I had some at a daycare Halloween party a few years ago and they were soooo yummy!

I love pumpkin muffins. I just made a pumpkin quiche last night--two eggs, some milk (1/2 cup?), s&p, 1 tsp. fresh thyme, and one cup pumpkin mixed all together. Pour it over a pie shell that has 1/2 cup of cheese lining the bottom and bake at 350 for 45-50 minutes. It was easy and good!

I came across some of the little sugar pie pumpkins today but didnt' buy any just yet. I might should have and may next trip by the fruit stand. I used to raise them and they made the best pies of all. With those I don't remember strings in the flesh. And maybe my wife took it out. That's a long time ago. Hair has change colors since then so who knows now. I do remember the richness of the pies though. As soon as possible they will be planted again. One other dish that we make with pumpkins is pumpkin pie squares. Baically the pie filling in a baking pan covered with some mixture my wife makes with pecans. All of her office parties request it.
