What I don't get is why don't chain pancake restaurants offer real maple syrup? You go to IHOP, a 'house of pancakes', and they have four syrups on each table lined up and ready for the pouring, and each one is a fake one with a corn syrup base. What gives?

Because real maple syrup is too expensive for a low-end chain like IHOP.
Corn syrup is cheap, cheap, cheap. And frankly, most of the people who frequent IHOP don't know the difference, and wouldn't care if they did.

Then offer it for extra, I don't mind paying more. I can't with that gluey crud they have on the tables. So which is the high end chain for a pancake house? This I gotta know. I'm not a fan of IHOP, but the kids like it. I end up ordering stuff that doesn't require syrup because I think it's gross.
Buy it local if you can, better for you and the economy
Not too many of us can by local maple syrup in the US. I like the Costco brand organic maple syrup its delicious and reasonable.
1 liter (33 oz) for $17.99 - and actually I think the price just went up it was like $15 when I bought it- it lasts us awhile, but I do drizzle over sweet potatoes and bake them, and add to bacon I am pan frying- YUM...
I love maple syrup, though I don't use much. A jug from Costco (about $19 for a liter) lasts me a long time. Fortunately, it keeps well in the fridge.
Pure maple syrup is a luxury item and yes, it is expensive. If it's not worth it to you, use the cheap corn syrup alternative. I think that stuff is nasty myself, but many people who grew up on prefer it to real maple, apparently because it's "thicker."
Same here. I don't mind paying for real maple syrup, and how fast are you going to use it up anyway? It's not something I eat every day. I doubt most people do. But it's worth it to to have the real thing, IMO.
I rarely have pancakes, but I put a little in my oatmeal.
One time I had real maple syrup. IT WAS QUITE G00D!! (I bought some from a store once (It said it was pure maple syrup))
