I know that it's possible to freeze fresh bananas for a batch of banana bread or muffins later on, but I've never done it before.
For a variety of reasons, we've got 5 dead-ripe bananas that nobody particularly wants to eat but that would make great baked goods at some point when our lives slow down just a bit. And to keep them from rotting in the interim, I'd like to freeze them.
So for those of you banana lovers who do that regularly, do you freeze them with the peel on, or do you peel them and put them in zip-lock bags to freeze? And if it's possible to do either way, which do you prefer and why?

I know that people do it both ways - in the peel and out. However, I prefer to peel them first because the peels get mushy and add an extra step when thawing.
My suggestion is to mash them and put them in 1 cup portions in zip-top freezer bags. That way you can pull out what you need for a recipe and know the amount. You could choose to mash and bag each separately, too. Some recipes call for the # of bananas vs. a cup quantity.
Either way you do it, it will be a nice treat on a cool day! Don't forget banana pancakes with chocolate chips!

I've just frozen them with the skins on because...well, just because. The meat never really gets frozen solid, so it works for smoothies and as snacks. But I'm really liking your idea - good one

Mash them with a little bit of lemon juice and put in freezer bag with air squeezed out.

I like to freeze them in chunks. For a relatively low-cal snack throw the frozen chunks in the food processor with a little lemon juice, sugar, vanilla, cinnamon, ginger, a little half & half, and process to the consistency of soft serve ice cream.

Just now found this thread! Great ideas. I have thrown out a few bananas in my time. How wasteful I have been. Will now know what to do with them. Thanks to all of you for these suggestions.
Freeze them only if you are going to bake with them. Personally, I would google "bananas foster" and they would be gone in an hour.
