I'm not Italian and I love everything about it. Besides the classic Lasagna and Spaghetti,I love Eggplant Parm and italian fish dishes.

I love the feel and texture of pasta...not too crazy about tomato sauces, but I do prefer them to Alfredos, or other cream sauces. Love the spices and cheeses! Don't care for the wines!

Everything. I love rustic qualities, the combinations of fresh ingredients and preserved meats, I love the herbs, don't even get me started on the cheeses, the fish; I love that you can spend a couple of bucks or thousands and eat like a king both ways. I love that Italians cherish eating as a group activity.

I'm not saying that I the Italians have the best cuisine in the world; but these are the things I love.

i love the fact that they use what is readily available in each region and make it their own. i love the delicate flavors and the fact that they use just a few ingredients to make the perfect dish.
i love that the desserts are never overly sweet. they dont knock you over with sugar, and yet they have some of the most wonderful desserts in the world.

meat and fish. Most of us tend to forget that the well-known Italian dishes, mainly pasta and pizza, were food for the poor.
