I don't think I've ever lived in a place where the designers gave any thought to the fact that the occupants might need to put a trash can somewhere near the kitchen. My current one is out in the hall, around the corner from the kitchen, in a traffic area. No matter where you put the trash, it's in the way. Or else inside a cupboard, behind a door that needs to be opened with a free hand, and then you forget to close it and trip over it.
I agree, builders obviously do not think about where to put a trash can. Mine sits against a wall between the kitchen and breakfast area. I hate having it right there, but there's no where else to put it. I did go buy a nice stainless steel one with a foot pedal. It's designed so that you can't see the bag, so it at least looks neat, without all the ugly white bags hanging out.

When we redid our kitchen 2 years ago, we put in a cabinet that is strictly meant for the garbage can. Love it. It's hidden, convenient (when I cut up veggies or fruit I can stand right next to it and dump the garbage right into it) and easy to get to.
I have my kitchen garbage can hidden in a cabinet in the kitchen. However, it holds no "smelly" garbage. Anything that smells goes to a garbage can in the garage which is located just off the kitchen.
Inspired by my own scintillating thread, I cleaned out the space under the sink and I'm going to try keeping it there. I might remove the cupboard door, which will leave it visible, but at least not in the way. I just have a dollar-store waste basket with a plastic grocery bag in it.
I ended up buying a very large rolling pet food storage bin with flip lid. It rolls where I want it and the lid stays open while I am prepping veggies etc.
Then, when done, I can roll it into the kitchen closet to be out of sight when necessary. Works for me.
I used to have a 13-gallon trash can in the kitchen sandwiched between the stove and the cupboard used to store large mixing bowls and pots. I have since relocated this trash can just outside my back door (going from the kitchen), and I'm now using it for small yard clippings.
Now I have a smaller trash can stashed underneath my kitchen sink with a plastic grocery bag as a liner.
