So, here's a dilemma...
The Publix flyer had a recipe for Sweet Potato Pecan Pie, and I'm thinking it might solve my issue of what kind of pie to make, pumpkin or pecan. It's just 2 of us so I only want one kind of pie.
We had decided on pecan, but now I'm torn.
Chicken (don't like turkey), dressing, mashed potatoes, yams, broccoli w/ cheese sauce and whole grain rolls. And, probably some type of tart for dessert from Whole Foods. Always, semi-traditional.
Thanksgiving? The only thing I like at Thanksgiving is turkey or ham, and maaaybe mashed potatoes, depending on how they're made. But I detest yams, cranberries, green beans, stuffing, etc. I also am not a fan of pumpkin pie.
So the night before Thanksgiving, I go to Round Table Pizza and get a large King Arthur Supreme. Thanksgiving is a holiday where I don't have to get up at the crack of dawn, get dressed up, cook something the night before (or buy anything) and I don't have to be social in a group of people I don't know or rarely see, or that I don't want to know and would prefer I rarely see. Thanksgiving is just me in my PJs all day, movies, and the pizza. Peace and quiet and total sloth.
In short, the only cooking I plan on doing is throwing the pizza in the oven to reheat.
I don't like Turkey, Green Beans, Pumpkin Pie or most of the rest of it either. We have Chicken and a few other things. And, always an anti-Thanksgiving Pie like a Fruit Tart or Chocolate Pie or something.
I Love To Cook! But.....I would love to cook something different for Thanksgiving. We have chicken and dressing every 3-4 months, corn and mashed potatoes almost weekly. I would like to cook half a turkey breast and a couple of thighs (3 adults and 1 child this year), roasted Brussels sprouts and kale and potatoe and leek casserole. Unfortunately, the other adults expect the "traditional" turkey, dressing, mashed potatoes, corn, etc.
In the end it is all about family and I'm thankful my family loves my cooking.

Why not make less mashed potatoes than usual, and make a 9x9 pan of the potato casserole as well? It sounds really good, and maybe you'll get a convert?
It's funny how traditions vary, I do love corn, but a green veg like your Brussels sprouts would be more what I'd expect at Thanksgiving.

Try broccoli casserole the kids love it too. Cheesy rice and cream of mushroom, broccoli and sauteed onions. It's our one constant favorite.
Spoiler
"Broccoli Casserole":
Ingredients
Minute Rice ~~ 2 cups uncooked
Broccoli Cuts ~~ Frozen ( regular size) Bag
Medium Onion~~ Chopped
Butter ~~ one stick
1 can cream of mushroom soup ~~ Campbell's Reg. size can is best!!
1 small jar Cheeze Whiz
Saute onion in butter, cook rice according to package directions, cook broccoli. Mix cooked, buttered onion, drained broccoli, cooked rice, soup and cheeze whiz and pour into a buttered baking dish. Bake at 350 degrees until hot throughout.
NOTE: we always double or triple these amounts to make for large crowds.

Thanksgiving is my favorite food holiday. I look forward to it all year. Our typical Thanksging menu includes:
Turkey (If we're lucky hubby will smoke the turkey)
Dressing
Mashed potatoes and gravy
Green beans with bacon and garlic
Hawaiian rolls
Strawberry pretzel dessert ( I'm taking the year off from making thus one)
Apple pie
Pecan pie
Pumpkin pie
