Are you familiar with Geoduck clams? The siphon is the long part sticking out of the shell. It is covered in a sheath (looks like a condom). It has to be blanched in order to remove it from the siphon before using the siphon. The siphon is then sliced thinly and "cooked" in citrus juices.
I'm thinking I'd like this. You dig these yourself and do you ever eat any raw?

The preparation on the left is basically raw, it's just had a citrus juice mix drizzled over it. It is a crudo presentation. They are very good, very fresh and briny tasting. The only thing I don't like about them is the cleaning process, as they are still alive when you start.
