If all you had besides regular staples (flour, sugar, butter, eggs, milk, spices) what would you fix with potatoes and onion?

  • potato soup
  • potato pancakes
  • hashbrowns
  • baked potato
  • mashed potatoes
  • potato salad
  • fried potatoes
  • Slice potatoes thinly. Layer in a greased casserole dish with thinly sliced onions, red kidney beans, and sprinkles of flour, salt & pepper. Dot with butter & pour milk on top. Sorry, no measurements, we just wing it. Bake until potatoes are done, 300* - 350* or so. Tasty, nutritious, inexpensive & filling.
  • Roast chunked potatoes and onions in oven.
  • Dice potatoes and onion and wrap in foil packets to bake or grill.
  • Crockpot potato soup -Peel and dice potatoes (about 5 pounds) and one onion. Put them in the crockpot
    with enough chicken broth to just cover potatoes. Salt and pepper. Cook all day on low till potatoes are tender. When you're ready to eat, use a potato masher to mash up about half the potatoes (right in the crock pot!) add two cans of evap milk and one stick of butter. You can top it with bacon crumbles or cheese or green onions.

My boss told me that she will peel a yellow onion, cut a dip in the top, scoop on some butter, wrap in foil and cook in the oven or on the grill.

She said its awsome.

I've heard of doing this with Vidalia onions. Some add some beef boulion....

All of it! I love both potatoes and onions.....now I'm hungry! Its been snowing today. If I would have planned ahead potato soup would have been good (except DH likes neither potatos -except mashed or french fries - nor onions)

Default onion rings

Now that you mentioned onions....There was a place in my city known for their big, sweet onion rings but even after they closed they would not give out the secret ingredient.

A lady who worked there in the sixties shared it with a guy the secret: they dipped the onions in melted ice cream before they battered them.

Since extra sharp cheddar is a staple in my kitchen, I'd make my famous cheesy-oniony-potato bake. That's mashed taters, a bunch of diced onion, tons of shredded cheddar and just enough undiluted evap milk to bring it all together. Dump it all into a baking dish or bowl, top with tons more cheddar and sprinkle some paprika over it, then bake uncovered at 350 until the top is crusty and golden brown, which is about an hour.

Get the small red potatoes and boil a couple with skin still on. When it is done, I put it between some paper towels because of the heat, and flatten it out. Then I drop it in the Fry Daddy. Nice and crispy outside, nice and tasty inside.
As far as both together, just slice both up, salt and pepper and a little butter, wrap in foil, and put it on the grill while cooking out. Mighty fine!
