The kid in me likes Jell-o salads. My college roommate used to make this stuff with lime Jell-o, cottage cheese and pineapple. It looked disgusting, but was delicious.
When i first started dating my wife year's ago,I went to her folk's house for dinner one Sunday,food was good,then there was this jell-o stuff,It looked like it had f**kin' broccoli or something in it,try choking that down,WTF?
I will admit to a particular fondness for a congealed salad that I make from lime (or lemon) gelatin desset mix, cucumber, onion, dill pickles, lemon juice, cream cheese, mayonnaise, and horseradish (optional)...all put through a blender and set in a mold (alternatively I use plain gelatin, lime juice, extra cucumber instead of dill pickles, and dill weed in place of some of the ingredients). It sounds horrible and looks even worse, but I like it! Indeed it is a refreshing salad on a hot day.
One of my relatives used to make an ungawdly concoction known as Tomato Aspic. I don't know the exact recipe she used, but you can find several online. Basically, it's tomato juice/V8 juice, combined with gelatin (flavored or un-), with some random vegetables tossed in.
I've had something that was pretty good. It didn't have jello, but it was still one of those "concoctions." As best I could tell it had:
mandarin oranges
sour cream
coconut
mini marshmellows
chopped pecans
The marshmellows kind of melted, and it was not real sweet. More heavenly than horrifying!
This is what we do and I don't consider it jell-o salad. THANK GOODNESS! You can also add grapes and marachino cherries if you want. Oh, we also put pineapple tidbits in it.
You do know that you can buy the small individual servings of Jell-O w/ Fruit IN IT at the grocery stores. I think Dole does it and they have had it for several years. My kids used to eat it all of the time. Now we just keep plain old jell-o in the individual servings around. Great for upset tummies.
