Now that a lot of us are in the "summer" mode with hot, humid days, what is your go to Summer Salad?
I like to do either a "sea-food mix" w/ pasta or a 3-bean mix.
The Seafood mix is usually imitation crab w/ salad shrimp and small elbow pasta and miracle whip + mayo, celery, green pepper, and red pepper, a little chopped onion.
3-Bean mix is the usual red kidney, green bean, garbonzo, with onion, dill?, sugar, vinegar (like a oil/vinegar mix) or just Italian dressing.
Either one with maybe some french bread and a Sangria.
Use dinner plate. Layer of restaurant style tortilla chips, lightly crushed. Layer of thin sliced vine ripe tomatoes. Layer of chopped fresh basil, layer of thin sliced vidalia onion. Drizzle with EVOO and Balsamic vinegar. Repeat. Eat with knife and fork.
My summer salad that I like to make for dinner has lettuce, arugula, tomatoes, a bit of chopped meat (ham or chicken), a couple of hard boiled eggs, sliced cucumbers, about a cup of cooked peas and a cup of cooked whole kernel sweet corn. I usually make the salad when I have leftover meat and veggies.
I do a version of the 3 bean - it's 5 bean: with red kidney, chick peas, black beans, green beans and canoline (sp?) beans. Into this goes oil, vinegar, chopped onion, chopped green pepper, celery, salt, pepper , a tbs. of sugar. I let it sit in the refrigerator overnight then drain. Great way to get your protein too.
wow, we are huge salad eaters so a couple come to mind, but there are others:
1-fresh fruit; just make a mixture of summer fruits, slice and dice. For the dressing we use a mixture of brandy and honey, not much of either. Sometimes I add a little sour cream.
Plain sliced cukes and cherry tomatoes are another favorite with sliced onions and just a little vinegar and sour cream or mayo.
Last but not lease (we are having it tonight) is a chinese type of salad. I am using reg cabbage but it is better with chinese cabbage: finely chopped cabbage, a little finely chopped broc and the same amount of cauliflower, 2 or 3 sliced green onions. Mix everything in a bowl with a dressing of 1/3 cup oil, 1/4 cup balsanic or rasberry vinegar, a table spoon of soy sause, 2 tsps fresh grated ginger, 1/2 tsp honey. Just before serving mix in about 1/2 of canned Chow Mein noodles,
