It does sound like something to try, but we were watching the Sandwhich King on the Food network a few months ago: his secret to great cheese sandwhich was use a little cream cheese on the inside, along with the cheddar or whatever kind you use. He says that makes it creamy and I would be inclined to agree.
Grilled cheese is a beautiful thing. I use at least two types of cheese, more often three types. Deli Cheddar for sure, swiss and either a muenster or provolone. I add a little bit of prepared mustard inside the sandwich before grilling. Slice of tomato too, if I have a good tomato. I also mix some garlic powder and dried parsley in with the butter before spreading on the outside of the sandwich. It's like a garlic bread grilled cheese. I love it!

I love the tomato addition..We use tomatoes on cheese sandwhiches and cheese toast. If the doctor told me, no more cheese I would just go quietly into the woods and shoot myself. Of course I don't own a gun adn wouldn't know how to use one if I did.
