I use 2 slices for reg. grilled cheese with American cheese. I have never tried three...can you get it melted without burning the bread? That's the tough part for me...Also, the tomato soup must be creamy tomato - if you use condensed, make it with milk please NOT water!

Use really low heat so that the bread browns slowly, allowing the cheese to melt before the bread burns.

My mom always made grilled cheese sandwiches in a covered electric skillet. She claimed the cheese melted better that way.

Gouda sounds nice as is a good quality cheddar. Add in some sliced tomato and yum!

Hmmm....I already use a lower flame but I may lower it more to get the melt just right. My mom and I disagree over the "right" way to grill the sandwich. I prefer mine with 2 slices, toasted to a nice golden brown; she likes hers with one slice, dark brown (not quite burned) and she smooshes the sandwich flat with a spatula which I consider sacreligious!

I'll eat them all! I've never met a grilled cheese sandwich - regardless of the bread or cheese used -- that I didn't love!

For my kids, it is usually just white bread with kraft singles, they seem to like that the best!
Sometimes I am able to use provolone but they really like the singles best.
For my husband & I.. I try different things.
Our fav so far has been the asiago cheese bread (that you can get a panera or other places similar) with either a gouda or a fontina cheese and spinach! yes,I melt the cheese and then put the spinach on after, let it get warm with the cheese... we call it our "gourmet grilled cheese dinner".
Sometimes I will make the bread like garlic bread for an extra flavor..

When I was a kid, my mom used to make them with the Longhorn Colby.

I always liked them.

One of my favorite nerdy kitchen toys is an infrared thermometer. After a little experimenting with it, I figured out that grilled cheese turns out perfectly for me with a 375 degree pan.
