Angel Food cake is relatively low in calories, for a cake. Still, kind of sweet IMO.
Mexican pastries are good, not too sweet, no clue as to how healthy they are though.

Agree with the Angel Food Cake...I add some mixed berries with light syrup in the can to the top of it. I quite like it.

Here is a link for Diabetic cakes and desserts. Some look really good. If you don't like artificail sweetners I would just use regular sugar but cut back(make sure the conversion is correct). I can't do Angel Food. Although it is low fat it is too sweet for me. How about an Apple Cake or a pound cake. Something without frosting.

Serve with icecream or fresh whipped cream. Very easy to make. Frosting optional.

Apple Cake

4 cups raw apples
2 eggs
2 cups sugar
½ cup oil
½ tsp salt
2 tsp soda
2 tsp vanilla
2 tsp cinnamon
2 cups flour
1 cup nuts
1 cup raisins

put in greased oblong pan 9x13”
Bake 1hour at 375 degrees

Frosting

½ cube of butter
2 small cream cheese
2 tsp vanilla
1 ½ cup powdered sugar
