I finished my taxes! I had to mail them since the program stated that I could not eFile

What a joy to go to the post office the day before April 15, or any day for that matter There were at least 6 persons ahead of me with only two people working. All of the sudden, there was a shift in the wind and one of the workers left her window. She didn't post a sign, she didn't say boo, she just left! I almost busted out laughing as I was recalling the sign in the parking lot stated that it was 15 minute parking for the USPS. If it were strictly enforced, all patrons would be towed on a daily basis.

I will be steaming some monk fish Hong Kong Style tonight.

GeorgeC-the other day I was in line with a package at our PO and was 14th in line w/2 workers who if they went slower would have been dead-behind me were about 6 more folks.

Looks like some Rice, shrimp, burgers and Brussel Sprouts . Burgers without the bread.....mom wants to eat healthier lol.

I found this recipe for a 6 Layer Dinner in an old Vermont Cookbook. It looks pretty simple but I bet it is good.

2 cups cubed raw potatoes
2 cups cut celery
2 cups hamburg steak (ground beef)
1 cup sliced onion
1 cup sliced green peppers
2 cups canned tomatoes

Place in casserole in order given (potato on the bottom) and bake 2 hours at 350. Season with salt and pepper.

Beanie weenies in process. For once Murphy is to late. Getting extra onion in mine too. I gave the hostess my order just like this is a five star joint. Now we will see what dinner fate awaits. Say a prayer for NMS. I looked at the radar and she is in big storm belt. Poor dear maybe having PB&J this evening.

I had a nutritionally balanced dinner:

Dairy/calcium from a nice Brie

Protein from pepperoni

Carbs from crusty, crunchy bread

All the healthy reserveratol from an Argentine merlot

And just to be sure we covered the bases, later I'll have a Lindt with chili bar and all its healthy ingredients

That's my story and I'm stickin' to it

Guess spaghetti will have to wait until tomorrow night--DH grilled up a couple of steaks and I made some baked potatoes to go with the steaks for tonights dinner. Turned out pretty good. Looks like the rain is gone for a few days anyhow. I actually fell asleep for an hour or so this afternoon---rare--guess all the goings ons have finally caught up to me! Still tired--early to bed tonight--see everyone in the morning.
