She will enjoy hospital fare for supper until Friday. She is getting a new fangled new knee. I expect her to eat well while this coming week I'm left to my ways...I may be alternating between Pizza and MickyD's....for the next three weeks..
Debsi! I'm glad to hear it was good even if the hubby wasn't impressed. Now I have to try it.
Tonight is mini turkey meatloaf, steamed green beans and some variation of quinoa and black beans.
Dinner sounds good. How do you do your quinoa? I've only made it once or twice and not all that impressed because it came out very wet and soggy, not nice and fluffy and separate. This may very well be the fault of the cook not the quinoa!
I combined a few recipes from the internet on the cornbread topping..
Ended up using 1 c. flour, 3 T sugar, 1/2 c. masa, 1/2 c. corn meal, and 1 c. grated cheddar. Could've used all corn meal but I had some masa from the tortilla experiments and it made for a softer more cakey corn bread. Yum.
Started with meat/bean filling already warm in round casserole dish, then spooned topping over all and baked uncovered at 450 for 30 mins.

Hey all.....don't have time to catch up right now but I want to report about my dinner's lately. We had such a great weekend, but my "detox diet" kind of flew out the window come Friday.
Friday night we had friends over and grilled chicken breasts that were seasoned with taco spices. Topped them with pepper jack, guacamole, tomatoes and onions and had with black beans and Spanish rice.
Saturday morning we went to the Farmer's Market and enjoyed lots of samples and also some empanadas and arepas. Bought my favorite sun dried tomato tapenade and a loaf of asiago basil bread. Also made up a huge pasta salad with ziti, cherry tomatoes, carrots, broccoli, scallions, bell pepper, parm, and italian dressing to bring up to a cookout with friends. Boy did we feast. We had steamed prawns seasoned liberally with Old Bay and grilled bread for apps along with margaritas and wine/beer. Dinner was grilled chicken, grilled steak, salad, mac salad, my pasta salad, and chocolate cake for dessert. There were about 20 of us there and it was a wonderful time.
Yesterday morning we went for a hike and did some house/yard work. Grilled out with friends AGAIN because the weather was fabulous and had corn on the cob, pesto potatoes, and stuffed, grilled bell peppers with a rice, corn, bean, onion, and lots of spices filling.
I just buy them when hubster's away as I don't usually feel like fussing over a meal just for me. Now, the cheese manicotti is very good!
On nights it is just me I just fry up egg sandwiches or something like that. My DD is more to pick a premade must be from dad's house because his new wife can't cook I am told by XH.

Oh my that is rare these days with hospitals seeming to spit everybody out the next day after surgeries. I bet you survive quite well while she is laid up we can send you cyber meals. Just think how slim you would be after 3 weeks of those. Hey maybe I need that kind of meals for a few weeks too.
EM-here's an idea. Dip in beaten egg, bread crumbs, pan fry, put in covered casserole and bake 45 min at 350.
Thanks Lacey..........that does sound good. done them in the oven like that but not covered. I can see how covering would keep them from getting to dry.
