1/2 teaspn sugar
1 teaspn salt
1/4 tspn blk pepper
dash cayenne pepper
1 #2 1/2 can tomatoes

Melt butter. Take about 1/2 cup bread crumbs and swish thru the melted butter. Remove crumbs and set aside for topping.

Cook the onion in the remaining butter, slowly. When tender add the sugar, salt, pepper, and cayenne pepper. Add 2 cups bread crumbs (or torn bread pieces) and mix. (I do remember the sugar made the dish slightly sweet and I loved it)

Take your 1 1/2 quart casserole, butter it . Open can of tomato break them up with a fork. Pour a layer in the bottom of the greased casserole. Place a layer of seasoned bread crumbs on this then a layer of tomato..crumbs etc. until all are used.

Top with the buttered crumbs you set aside in step 1.

Bake at 375 for 45 mins. (uncovered)

Cyn I've done that with canned stewed tomatoes, torn chunks of Italian bread, oregano, garlic.

Elston and Lacey those both sound good and I will try both ways. It was just such a satisfying flavor--that is all I can really remember. Of course my grandma made it so that was a big part of that wonderful flavor I am sure. Everything she made was prepared with love and you could taste that!!

That tomato thing sounds good.. but I could never get DH to try it. He is part of the huge anti-tomato coalition. He will let me slide a couple on to his sandwich though only if they are sliced very thin. Still, I suppose this is a breakthrough..!


Tonight will be:

A) chinese food

B) pizza

C) refrigerator surprise

It occurs to me that I have also heard the same dish refered to as "tomato pudding" but it isn't a desert pudding.
I googled that and found recipes..... http://southernfood.about.com/od/tom...r/bl81114l.htm this one sounds really good.....and it calls for bread cubes not crumbs....and has more sugar. (brown sugar)... another recipe called for cracker crumbs and I think Gram used to make it with those fat milk crackers...Pilot Crackers.

I haven't completely decided on dinner yet. There are just so many good choices. I'll have to check back later. It might be english muffin pizza's.

Hmmmmmm....not sure about tonight yet either. We have pork chops defrosting in the fridge, but I think we'll have them tomorrow instead, with onions, mushrooms, cream of mushroom soup, and stuffing.......

I think we might go out again with friends -- sounds like a good way to spend Friday night to me!

I know there will be dinner but at the moment I'm in a total state of confusion. I'm not picky. Hot dogs would suit me. Even a grilled cheese. I should call the wife and ask her if I need to thaw any thing out.
