Tuna noodle casserole tonight w/cream of celery soup, red peppers, peas, topped with either crushed Ritz or Durkee onion rings.
This is something I could never stomach (as my mother's was inedible) until Cyn made it last year and wow what a difference. Mr. L asked for it for years but I could never "stomach up' to it.
I hear ya Lacey.....however, I bought some tuna last time at the store because all of a sudden I am craving -- tuna casserole!!

Having gone to Catholic school for years, I still can't stomach even the smell of tuna noodle casserole.
NMS-I know what you mean but I try to "juice it up" w/fried onions, pimentoes, peas.
My mother's was gross-just a can of tuna, cream of mush soup topped with crushed potato chips-it was gag city those nights.
If it wasn't for Cyn I would never have tried it again.
We always had it with VELVEETA melted on top. I still do that and have with cream of mushroom soup, fresh sauteed mushrooms, frozen peas, egg noodles, and lots of pepper. Will have to jazz it up with the pimentoes!
I recently bought some of the tuna packed in olive oil instead of water....I had some recently and really liked it. I am thinking of using for the tuna and capers on spaghetti that I saw somewhere recently....perhaps on the can of tuna or here not sure....but I can do that.
Tonight I'm leaning towards homemade pizza with ground beef, green chile, maybe some black olives and lots of cheese. Hope you all have a good and safe weekend. Happy Easter and/or Passover to all.
My son said he caught heck from his spouse because she told him to get fish for supper tonight....(they have her family visiting for easter....they are very good Catholics....my son isn't at all religious. He went to the fish store on the water and came home with a beautiful and expensive filet of fish.....she got angry and said it was supposed to be a sacrifice...not a banquet! He loves fish and is a remarkable chef! They will love it...I have no doubt.
Seems the thunder and lightening have passed for awhile so I'm back.
My tuna casserole is pretty basic and simple although I do like to add a bit of tabasco in it and lots of cheese on the top. I also like to make my own noodles to put in it. That makes it really good!! Happy to hear you are enjoying it Lacey!
Looks like the shrimp is going to have to be prepared inside tonight. Guess I'll make some good, healthy brown rice and peas. That part could still change though...
Hi everyone! I never got around here yesterday, just a busy day.
Tonight for dinner I am making a salad, shrimp scampi w/ Angel Hair pasta. And, of course, a piece of bread to soak up the scampi sauce.

I got a PM to post the recipe for my shrimp scampi. I have two recipes actually, but, tonight I am making the following one.
Simple Shrimp Scampi
24 large shrimp deveined
1 cup of flavored bread crumbs
6 cloves (or more) of minced garlic
1/2 cup white wine, I use a dry chabis
4 TBSP lemon juice (about 2 lemons)
1/2 cup of clam juice
salt & pepper to taste
Dip shrimp in crumbs to lightly coat
Saute shrimp in hot butter till golden brown
Drain the butter
Add rest of the ingredients to the shrimp
Return to high heat until reduced and saucey
Enjoy!
